It would be great for breakfast, Brunch, or as a snack at a get together. Lo in Carbs & delicious!!!!!!! SO EASY Ingredients: 9 Eggs 2 lbs. Colby/Jack mixed shredded cheese Jalapeno Peppers (sliced) How To Prepare: Preheat oven 350 Spray 9x13 casserole dish Beat eggs well. Add 1/2 of cheese mix well. Add 1/4 to 1/2 C. of Jalapenos(if yo want hot you can add more to taste). Put remaining cheese on top of egg mixture. Bake 30-40 minutes until eggs are firm. Cool 5 minutes. Slice into squares. Can serve as is or with pacanti or favorite salsa. Mkes 6-8 servings depending on size of slices. Delicious. SERVE WARM!! 6-8 carbs per serving. It is Lo in Carbs & very filling at a meal with salad or any type breakfast meat. Can add to this recipe & make a sausage, bacon or even a vegetable casserole for a complete meal.
