Description:
Ingredients: Butter or Pam cooking spray
2 jalapeno chile peppers --
(2 to 3) finely chopped, fresh or pickled in a jar
10 ounces grated cheddar cheese -- finely grated
1/2 cup chopped green onions -- green and white parts
6 eggs
Salt
Garlic powder
How To Prepare: Preheat oven to 225.


Butter a glass pie dish (or spray with Pam). Scatter jalapenos on the bottom of the dish. Cover evenly with shredded cheese. Over this, place the chopped green onions.


In a bowl, beat eggs with a dash of salt and garlic powder. Pour egg mixture over all in pie dish as evenly as possible.


Bake at 225 for one hour or until set and the top begins to brown. Cut in pie-shaped wedges to serve. Serve hot.


This is a wonderful appetizer--great for parties. Or if you're really into spicy stuff, it might be a good make-ahead breakfast food. If you buy pre-shredded cheese and peppers in a jar, you can put this together in about five minutes flat.
