1/4 green bell pepper -- or red, sliced thinly
1 tablespoon butter -- for cooking (1 to 2)
How To Prepare:
Saute pepper slices over medium heat until soft. Break eggs over the peppers and stir until they are cooked. Add salt & pepper to taste. Makes one serving, but easily doubled or tripled. Good for breakfast, lunch or dinner.
By the way, "frittata" can be made with any kind of vegetable or meat, break the eggs over sauted ingredients in pan and stir until the eggs are set. I've never had a bad frittata and it's perfect for the Atkins WOE!
