Last night I was scouring the cabinets for something sweet yet filling since I hadn't really had dinner yet but I still felt that it was late enough to have a treat.
I checked out some LCF recipes and came across this one.
I absolutely LOVED it. I would consider maybe using 3 eggs just for alittle more filling but other than that it was [color:red]excellent[/color].

I was very skeptical that this recipe; I didn't think there was any way it wouldn't taste like eggs. For the most part, I was completely wrong. I used 3 eggs like the previous poster recommended. I would use 2 eggs next time. I used DaVinci's French Vanilla instead of vanilla extract. I used 1/2 tsp splenda in the egg mixture and 1/2 teaspoon when adding the strawberries. When I first started eating it (no syrup) I could taste the eggs a little bit so I poured a little DaVinci's over it. That did the trick. Next time I think I would add a little nutmeg to the eggs too. But overall, an excellent break from too many fried or scrambled eggs!

I put some sugar free syrup on this and it was great. Nice change of pace from "regular" eggs.
