Description:
Ingredients: 2 eggs
2 tablespoons heavy cream
1/2 teaspoon maple extract
1 package artificial
sweetener
1 tablespoon butter
How To Prepare: Break eggs into bowl, add
cream, extract and artificial
sweetener; beat eggs well
with fork. Heat butter in
skillet, when hot add eggs
and scramble as usual.
Serve with crisply cooked
bacon.


(Also good w/vanilla extract
kind of tastes like cake
batter. The sugar/butter/egg
part before adding flour).


NOTES : Counts for maple
extract not included in
totals.

Perfect when you need something sweet for breakfast, with the absolute minimum of carbs. So tasty! Put a little extra Splenda on top and it tastes a lot like French toast.


Instead of frying in a skillet, I buttered a glass bowl and nuked the mix in it for 2.5 minutes.

This was great. It's as fast as scrambled eggs and satisfied my craving for something sweet. I made it with a little vanilla and omitted the maple extract because I didn't have any. But when finished I poured a very small amount of sugar free maply syrup over it and it was wonderful. I will make this again and next time I am going to add a small amount of cinnamon to the eggs.


Thanks for posting this. It was just what I was looking for. Easy and quick ... definately going to be a staple here.
