1 pkg (10 oz) frozen chopped spinach, thawed and drained, 1 sm. onion chopped
8 slightly beaten eggs in a large bowl (put feta cheese to the side for now)
How To Prepare:
Heat 2 Tbsp. of oil in a large skillet over med. heat. Pour about 1/4 cup of the egg mixture per pancake and sprinkle about 1 Tbsp of Feta Cheese on top of each pancake. Cook about 2 min. per side til golden brown - I topped mine w/sour cream. This is a great dish not only for breakfast but makes a super change for a GREAT dinner!!
