10 large eggs
1 tube of mild sausage
1/2 medium green bell pepper
1/4 cup of cream 4 slices of bacon
1/2 cup of shredded cheddar
salt and pepper
muffin pan w/12
How To Prepare:
First cut sausage into 12 pieces and cook in skillet along with the bacon.
While those two things are cooking, beat the eggs, salt & pepper, and cream together in mixing bowl and set aside. Chop bell pepper into small cubes and set aside. Once sausage is done place one piece in each muffin cup, set aside. Remove bacon from pan and drain grease on paper towel. Once bacon is cool crumble it up. Put bell peppers in grease and cook about five minutes until tender. Now, pour egg and cream mixture over sausage. Leave a little space at the top. Put bell pepper pieces on next then bacon, then sprinkle cheddar over the top. Cook in a 400 degree over for about 10 to 15 minutes until muffins overflow and eggs are brown on edges.
