Amazing no flour peanut butter cookie with additional chocolate center.
• 1 cup peanut butter creamy or chunky (I used half and half-Simply Jif brand) • 1/4 cup (2oz) cream cheese (creamed into peanut butter) • 1 cup Splenda (or slightly less if you prefer less sweet) • 2 tablespoons Splenda/Brown Sugar Blend • 1 egg • 1 teaspoon baking soda • 1 pinch salt • 1/2 teaspoon vanilla extract • 1/4 teaspoon cinnamon • 1/4 square ChocoPerfection bar in center of each cookie (optional)
How To Prepare:
1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. 2. In a medium bowl, stir peanut butter and cream cheese together, next stir in Splenda and Brown Sugar Blend until smooth. Beat in the egg, then stir in the baking soda, salt, and vanilla. Roll dough into 1 inch balls and place them 2 inches apart onto the prepared cookie sheets. Press a criss-cross into the top using the back of a fork. (Dip the fork in Splenda if you want to help with sticking) 3. Bake for 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
