Keep track of the amount of carbs in your ingredient brands and divide by the number of cookies you end up with for exact carb count!
Ingredients: 1 cup splenda
1& 1/2 sticks of butter
1 tablespoon vanilla extract
2 eggs
13 tablespoons peanut butter
2/3 cup chopped almonds

Also set aside:

2/3 cup low carb bake mix

Also mix together and set aside:

2 tablespoons extra splenda
1 tablespoon cinnamon
How To Prepare: Preheat oven to 375 degrees(F).

Leave set aside ingredients aside!

Mix the rest of the ingredients together. Mix well.

Add bake mix to mixture. Make sure it is mixed in, but do not over mix!!!!!

Roll dough into balls about the size of a quarter. Place onto cookie sheet.

Take set aside splenda/cinnamon mixture and dip a fork into it. Then use the fork to flatten the cookies and to put a criss-cross design in the cookies. (The splenda/cinnamon will help the fork not to stick to the cookie as it "mooshes" it!)

Now cook cookies in 375 degree preheated oven for 9-10 minutes. Remove from oven and let cool before removing from cookie sheet.
