Dottie Lemon Bars Reviews Date of last review 3 Sun October 30, 2005 Recommended By Average Price Average Rating 67% of reviewers None indicated 9.0 Description: Ingredients: Crust 1 cup Atkins Bake Mix -- (Sorry -soy flour would be too heavy...) 1 stick butter -- softened 1/4 cup artificial sweetener -- splenda Filling: 3 eggs 1/2 cup artificial sweetener -- splenda 4 tablespoons lemon juice Topping 1 tablespoon artificial sweetener -- splenda 3 ounces cream cheese 1 tablespoon lemon juice How To Prepare: Put these 3 things in a food processor and process in pulses until crumbly. Press into a 9X13X2 cake pan that has been sprayed with Pam. Bake in a preheated 350f oven for 15 minutes or until just browned. Let cool while you prepare the filling. Beat these 3 ingredients together well. Pour over slightly cooled crust and put back in oven for 20 minutes or until set (depends on your oven - may take as long as 30 - watch carefully). This is not as thick as traditional lemon bars -but you *could* dou ble the filling ingredients if you're bold;)). Allow to cool - then blend: And drizzle over bars. Yes | Price you paid?: None indicated | Rating: 10    Positive aspects of the product (pros): Quick and easy to make Cons: Way too yummy! You'll eat them all. These bars taste just as good as the "real deal". I followed the recipe precisely until I ran out of lemon juice, so I added a bit of lime juice to the filling and made the icing with lime. Made it a bit tart but that was exactly the taste I was craving. Be sure to let it cool down completely before icing or it will get a bit soggy.

Also, I added about a teaspoon of vanilla extract to the topping for added flavor.
