Description:
Ingredients: 2/3 cup protein powder
1/3 cup flax seed -- ground,
or flax meal
1 cup artificial sweetener
2 eggs -- beaten well
1/2 cup butter -- softened
1/2 teaspoon salt substitute
3 tablespoons sugar-free
peanut butter -- giant
heaping tablespoons
1 teaspoon vanilla
2 1/2 tablespoons oil
How To Prepare: Cream butter, oil,
splenda,and salt. Add
peanut butter and mix well.
Add beaten eggs and
vanilla. Dump in Flax and
protein powder, and beat
well. Should be a fluffy
consistency.
Drop by spoonfulls onto
cookie sheet. Bake at 375
for 8-10 minutes
(I found 8 minutes yields a
more moist cookie).


Makes about 24
medium-sized cookies


NOTES : Carbs for
sugar-free peanut butter not
included in above total -
adjust accordingly

two recipes I found here on
this board, and just
modified them a
little myself, so this is part
Carrie's recipe, part Lil
Red's, part mine. They are
TERRIFIC!!

Positive aspects of the product (pros): fluffy cookies
Cons: soy flour taste

This was my first time using soy flour and I now see why a lot of people do not care for it. The recipe was good, but I probably won't make it again using the soy flour.
