Ingredients:
|
1 C shredded zucchini,squeezed dry
1 egg
1/4 C nuts
1/3 C melted butter
1 t. vanilla
2/3 C Splenda, divided
3/4 C soy flour
1 T. wheat gluten
1/2 t. baking powder
1/2 t. baking soda
1/4 t. salt
1/2 t.cinnamon

How To Prepare:
|
1.Mix zucchini,egg & nuts; set aside
2.Mix butter, vanilla and 1/3 C Splenda;set aside.
3.Combine remaining ingredients, then combine all three mixtures.
4.Spread in 8"round pan- it'll be thick.
5.Bake at 350 for about 25 min.
6. Fantastic topped(when cool)with whipped cream cheese that has been flavored with Splenda and vanilla!
