UFMike Modified Betty Crocker Chocolate Chip Cookies

3/4 cup Splenda
1 stick butter, softened
1 large egg, beaten
1 tsp. vanilla extract
1/4 cup soy powder
1/4 cup milk & egg protein
1/4 cup vital wheat gluten
1/4 cup finely ground almonds
1 tsp. baking soda
1/2 tsp. salt
2-3 low-carb (e.g., Carbolite) chocolate bars or 5-6 "Pure De-Lite truffles", chopped
How To Prepare:
Heat oven to 375 degrees. Mix Splenda, butter, vanilla and egg in large bowl. Stir in flours, baking soda and salt. Stir in chocolate chunks. Drop dough by rounded teaspoonfuls about 2 inches apart onto cookie sheet. Bake 8-10 minutes, or until edges are crispy brown (centers will be soft). Cool slightly, remove from cookie sheet. Cool on wire rack.
