Ingredients:

2 tablespoons cocoa
(I love Droste--use a good
quality cocoa)
4 tablespoons Thicken/Thin
Not Sugar (see note below)
20 splenda packets
8 ounces mascarpone
cheese --
room temp or warmed
slightly
2 teaspoons Vanilla
1 teaspoon coconut extract
-- or more
4 tablespoons melted
butter
2/3 cup chopped almonds
-- coarsely chopped, more
2/3 cup unsweetened
coconut meat -- shredded,
or more

How To Prepare:

Note on Thicken/Thin: This
is a wonderful product from
Expert Foods, this recipe is
so good you'll find it well
worth the cost and time to
acquire this ingredient (no
affiliation, about $15.00
from expertfoods.com). It is
a very fine vegetable fiber
used as a binder or
thickener (much like the
way you would use sugar in
other ways than
sweetness). It is not grainy
at all like guar gum (do not
try this recipe with guar
gum, you'll be very
disappointed). This recipe
gives you the taste of fine
milk chocolate--it is
wonderful! Melt the butter in
microwave, then add cocoa,
thicken/thin, splenda,
mascarpone, and
flavorings. Mix well. Then
stir in nuts and coconut.
Pour mixture into an 8x8 or
9x9 square pan and freeze.
While still slightly soft make
cuts in the pan, then freeze
well before removing bars.
Store in the freezer, these
are soft enough to eat
directly from the freezer.
