1 Cup Soy Flour
½ Cup Splenda
½ tsp Baking soda
½ tsp cinnamon
¼ tsp nutmeg or allspice
Mix above ingredients and set a side;
1 Large Egg
½ Cup heavy cream
1 Tablespoons melted butter
1 kiwi just starting to ripen peeled and chopped in cubes
How To Prepare:
Whip the egg and cream then add butter and slowly start adding the mixed dry ingredients above. When all is mixed fold in the peach cubes. Use butter to grease each individual muffin space and fill ¾ of each space with batter. Cook at 425 for 15 to 18 minutes.
