Description: These lemon muffins are incredible -- I modified another flax bread recipe I found on the internet and I LOVE them!!!
Ingredients: 2 cups ground flax seed
1/2 cup olive oil
4 eggs beaten
1/3 cup lemon juice
1/3 cup splenda
1 tsp. baking powder
How To Prepare: Mix all ingredients together in a mixer. Let sit for 2 min. Scoop into muffin papers. Bake @ 340 for aprox. 20 min. (brown on top/pops back up when you poke it)
Number of Servings: 12
Carbs per serving - include all nutritional information if known: aprox. 2 net carbs (5 grams of fiber)
Preparation Time: 5 min.

Cons: None

Made these to add flax to me diet. 2nd time I made them, I omitted the lemon juice (replaced with water) and added a 1/4 cup of sunflower seeds for a bit of extra crunch. Excellent topped with a bit of cream cheese!
