1 cup carbquickLC
3/8 cup splenda
1/2 cup pineapple chunks in water
1 whole eggs
1 tablespoon olive oil
3/8 cup cheddar cheese
1/4 cup walnuts
3 tablespoons butter -- ( 1/2 T per muffin) More if you like it.
How To Prepare:
Preheat oven to 350 degrees F.
Using a large mixing bowl, sift the flour and sugar and mix together. In a separate bowl, mix the pineapple, eggs, oil, and add to the flour mixture, mix well. Fold in the cheese, nuts, and pineapple extract. Divide into 6 muffins bake 350 about 20 minutes or until golden brown.
K Index 1.64 Higher if you add more butter. Lower carbs if you use liquid splenda.
