Description:

A low carb variety to those you find in a authintic Tex-Mex resturante! Just like Abuela (Grandma) used to make. :o)

Ingredients:
|
1 Cup low carb bake mix (or Atkins, we found one at Wal-mart that has 0 net carbs per serving)
3 tsp. baking powder
1 tsp salt
1/4 cup lard chilled (we used Crisco)
3/4 cup warm water
1-2 tbsp. olive or veggie oil

How To Prepare:
|
Mix the bake mix, salt, and baking powder in a bowl. Add the lard (crisco) and mix with your fingers until you have it completly crumbled in.
Slowly add the warm water and stir with a large spoon. Take out and put on a "floured" (bake mix) on a smooth surface and knead for 3-5 mins. Place 1-2 tbsp oil in a large plastic bag, place dough in bag and let sit in a warm place for an hour. Pinch off golf ball size pieces, let rest another 15 mins. Roll out the balls until resemble tortillas (about 7 inches in diamater). Cook on a HOT skillet or Comal, turning only once. Place inside a tortilla warmer, in a bowl lined with a clean dish cloth or between two towels. Any left overs can be stored in a plastic bag when cooled.
Yields 9-10 tortillas.
