Ingredients: 2 green chiles
2 red chiles
1/4 yellow bell pepper
1/2 medium onion
4 ounces butter -- 2 oz
(2 oz to fry the chillies and
onions, 2 oz melted)
1/2 cup soy flour
1/2 cup flax meal
1/2 cup ground almonds
2 tablespoons gluten flour
-- optional?
1 teaspoon baking powder
1/4 teaspoon cumin
1/4 teaspoon chili powder
1/2 teaspoon salt -- pepper
3 eggs -- beaten
1/2 cup water
2 ounces grated cheese

How To Prepare: Preheat Oven to 375. Gently
fry the chillies, pepper and
onions in 2oz of the butter
until softened. Butter a
shallow baking tray (swiss
roll tin). Mix all dry
ingredients. Beat eggs and
softened butter into dry
mixture, gradually add
water. Mix in vegetables Add
Cheese. Spread evenly in
tin. If desired, sprinkle with
finely grated cheese and
pinch of cayenne, and
chopped fresh coriander if
available. Cook for 15 to 20
minutes until risen and
golden brown. Cool and
turn out carefully. Serve hot
or cold, with guacamole,
sour cream, cheeses, or
just by itself!
NOTES : Counts for gluten
flour not included in totals.
