I served these to some guests and they said they tasted better than non-low-carb corn muffins because they were moist and not dry like normal corn muffins. These rose nicly in the oven, but when they cooled they deflated. Also - I had to leave out the parmesan, but put in cheddar instead. The cheddar in it went over very well.

A little greasy

I used 1/3 c of vital wheat gluten flour in place of pancake mix. I did not use parmesan cheese.
The next time I bake these I will lower the oil to maybe 3 Tbsp. The original called for 1/4 c which is too greasy (for me).
Overall this was wonderful.
