4 pasilla Peppers
1 lb ground beef
8 oz whipped creamcheese
1 cup pepper jack cheese
How To Prepare:
Place peppers under broiler for few minutes on each side to blister skin. Under cold running water, peel off skin. Make a cut on one side of pepper and use finger to take out seeds. Set peppers aside. Cook ground beef (adding spices, I use cumin, garlic and red pepper flakes) once cooked, add cream cheese. Cool. Add pepper jack cheese and stuff peppers, seam side up. Cook on 325 for 30-40 minutes. Sprinkle with Cojita cheese when done.
