A yummy dinner I whipped up tonight with some frozen ground beef and an extra carton of eggs!
1 lb. 90/10 ground beef, 10 eggs, 1 cup colby jack cheese, 1 medium onion, 2 tbs taco spice, dash of salt
How To Prepare:
Chop the onion, and place in a large cast iron skillet with the ground beef. Cook on medium-high heat until the ground beef is done, but not brown (!) and the onions are soft. Add 2 tablespoons of taco seasoning and mix well - this makes a quite mild dish, so add more spice if you like. While the beef is cooking, in a large bowl, beat together 10 eggs and a dash of salt - you can add anything you like to this such as pepper, hot sauce, scallions, garlic, etc. Smash down the beef so that it is evenly distributed in the pan and flat on top. Pour on the eggs, reduce the heat to low, and place a lid on. Cook approximately 10 minutes, checking every 5 minutes, until the eggs are cooked all the way through. Sprinkle the cheese onto the eggs and place under the broiler for 3 minutes or until cheese is melted and bubbly.
