Description: Only item in this recipe that's not really low-carb is the tomato sauce
Ingredients: 1 1/2lbs. chuck
1 medium onion, diced
2 stalks celery, diced
2 carrots, peeled and sliced
3 cloves garlic, minced
1 small head of cabbage, cut into bite-size pieces
2 small turnips, peeled and quartered
1 small can tomato sauce
6 cups water
2 tbs. beef boullion
1 tbs. paprika
2 bay leaves
Salt & pepper to taste
1/2 tsp. cayenne (optional)
How To Prepare: Using a dutch oven or stew pot, brown meat in some olive oil until meat is almost blackened. Add vegetables and continue to brown. (A splash of red wine at this point to deglaze pan is optional). Add water, boullion, tomato sauce and seasonings. Simmer for 3 hours stirring occasionally. When vegetables are all tender, remove the turnips and puree them in a blender. Add back to stew to thicken.

Great with any of the bread recipes for dunking
