Description: Married to an Hispanic man, we were used to delicious Mexican food. But as those who also love Mexican food know, it is loaded with carbs. When we found this bake mix and tortillas, all we could do is praise the Lord, and drool. Here is mouth watering carne guisada tacos recipe, but low carb!!
Ingredients: 2 lbs. stew meat (if not lean, then trim excess fat)
2 Tbsp olive oil
3 Knorr brand Caldo con sabor de Res (beef bouillon)
4cps. water
5 tsp. ground comino (cumin)
1/4 cup + 1/8 c. Mini-Carb brand bake mix (0carbs)
cheddar cheese (optional)
La Tortilla Factory brand low-carb tortillas (3carbs/tortilla)
Hearty appitite
How To Prepare: Brown stew meat in olive oil in a dutch oven or similar pot. Once meat is browned, add water, boullion, and comino. Bring to a boil, cover and simmer until tender (1-1 1/2 hours).
When meat is tender, add bake mix and stir, mixture will thicken.
Heat tortillas on a skillet, turning once. Fill with beef mixture, and cheese if desired. Enjoy!

Carbs per serving - include all nutritional information if known: meat mix 1 carb each serving, 3 carbs per tortilla, 0.2 carbs per 2 tbsp. cheddar cheese.
Preparation Time: 1-1 1/2 hours
