Ingredients:
|
1/2 cup Atkins Bake Mix
3 tablespoons heavy cream
4 ounces cream cheese
1 cup shredded sharp
cheddar cheese
1/2 cup parmesan cheese
2 eggs
1/2 large zucchini
3 tablespoons butter
3 cups ground beef
1 cup crushed pork rinds
garlic salt and pepper
water

How To Prepare:
|
Preheat oven to 400
degrees. In a large pot,
brown ground
beef and drain. Return to
heat, add pork grinds and
cream
cheese. Mix well until cream
cheese is melted. Add
garlic
salt and pepper to taste.
Turn off heat and add eggs,
mix
well. Pour into greased
medium-large casserole,
spread out
evenly.
Cut zucchini into thin slices
and top over ground beef,
top
with cheddar and
parmesan cheese.
Melt butter, and mix with
Atkins bake mix, heavy
cream, and
water. (Add just enough
water that the batter turns
out soupy
but not runny) Spoon evenly
over casserole.
Bake at 400 degrees for 20
minutes, or until top is
brown and
"crunchy".
This recipe is awesome
and very addictive! I also
like to add
red and yellow peppers for
an extra kick. The whole
family will
enjoy this one - for a bigger
casserole, just double the
ingredients. Enjoy!
NOTES : Counts for pork
rinds and garlic not
included in totals.
