Ingredients:
|
2 pounds ground chuck
1/2 TVP
4 ounces tomato sauce
2 eggs
1/2 cup chopped celery
1/2 cup chopped onion
1 tablespoon
worcestershire sauce
1 tablespoon dijon mustard
10 ounces frozen spinach --
thawed and drained well
4 ounces mozzarella
cheese -- or provolone,
sliced
3 roasted red pepper
Mrs. Dash seasoning

How To Prepare:

Mix TVP with tomato sauce,
eggs, worcestershire, &
mustard. Let stand for
10 - 15 minutes to soften
TVP. Combine TVP mixture
with beef, celery, and
onions. On wax paper,
spread and shape meat
mixture into a 10 X 14
rectangle. Sprinkle with Mrs.
Dash, distribute
spinach over meat, sprinkle
with Mrs. Dash, cover with
cheese, top with red
peppers. Starting
at narrow end, roll meat like
a jelly roll, using wax paper
to help roll it. Place seam
side down in
a baking pan. Tent with foil
and bake at 350 for 35
minutes, remove foil and
bake an additional 25
minutes. Let stand for
10-15 minutes before
slicing.
This is a great dish to serve
to your non-Atkins-believing
friends --
or take the leftovers to lunch
so your lunchroom buddies
can see we're not just about
eggs, turkey, & tuna!
