Ingredients: 4-5 lb Chuck or pot roast
1 onion
1 can of diet rite
2 tbsp brown sugar TWIN
20-30 whole peppercorns
10-15 nacho jalepeno slices..I use spicy but you can use mild!
1/2 clove garlic (use the whole peices)
All seasonings are according to taste but this is what I use:
1 T ground Ginger
11/2 T Cinnamon (or you can add cinnamon sticks)
1/2 T allspice
How To Prepare: Brown the roast well on all sides in a frying pan. In a large oven pot combine the 1 can of soda, half of the onion, cut into rings pref. 1/2 of the garlic, jalepenos and peppercorns. Add all the spices, brown sugar twin and stir. Add salt as well, I use sea salt. Place the roast in this mixture and cover with everything remaining.
Put in a 350 degree oven for no less than 2 hours. The longer you leave it in the more tender it becomes, it almost has the texture of shredded beef. If you desire a super tender roast turn oven to 250 after the first two hours and check once every 2 hours to monitor.
Number of Servings: depends, my boyfriend and I are bodybuilders so it only lasts about a day
