Ingredients: 1 cooked head of cauliflower,drained
2 c. cream
4 oz. pkg cream cheese, softened
1 t. salt
1 t. pepper
2 T. butter
2 T. thickner(I use tapaiocia)
1 (141/2-ounce)can diced tomatoes with basil, oregano, and garlic
1 t. splenda
1/2 t. pepper
How To Prepare: For Potatoes:
Stir together cauliflower and cream cheese(you may have to microwave a few secs to melt cream cheese)Then add cream, salt and pepper and mix with elec. mixer until well blended like regular creamed potatoes.

For Tomato Gravy:
Melt butter in large saucepan over medium heat, add thickner, stirring until smoothe. Cook, stirring constantly, 1 min. Add broth, stirring until smoothe. Add diced seasoned tomatoes, splenda, and pepper and cook, stirring often, 3 to 5 mins. or until thickened. Serve over mashed "potatoes."
