6 medium zucchini (about 1-1/2 pounds) about 4 cups
4 green onions, chopped
1 Tbsp fresh dill (or 1 tsp dried)
2/3 cup sour cream
3 tbsp freshly grated parmesan cheese
3 tbsp butter
¼ cup chopped parsley
1/8 tsp pepper Pre heat oven to 375. Grate zucchini and let stand in a colander for 20 minutes to drain (I usually drain overnight in the fridge). If not dry enough this can be watery. In a skillet, melt butter and sauté onions until soft . Stir in parsley, dill, salt pepper and sour cream. Add the drained zucchini, then pour into a 1-quart casserole. Sprinkle cheese on top and bake for 35 minutes. This is delicious!! I calculated the entire dish as approx 30 carbs, but it makes a lot.
