Quick and EASY veggie side dishes-everything from Asparagus to Tomatoes here!

Ingredients:
|
Asparagus- drizzle w. olive oil, sprinkle w. salt and pepper. Roast at 425* for 8 minutes.
Broccoli- steam, then top with a little flavored mustard, melted butter and a spritz of lemon juice
Eggplant- marinat slices in balsamic vinegar and grill alongside the entree
Spinach- stir oregano and feta cheese into chopped cooked spinach
Tomatoes- toss wedges with balsamic vinegar, ground pepper and fresh basil. OR top slices with crumbled feta cheese
