Description:
|
Kohlrabi stuffed with beef, onions and mushrooms, smothered with sauce.
|
|
Ingredients:
|
* 10 kohlrabi
* Filling:
1 T fat
1 t onion, chopped
1/2 t parsley, chopped
2 mushrooms, chopped fine
3 c leftover beef, chopped
1 egg
salt, pepper
* White Sauce substitute of your choice (cheese sauce, cream sauce, white sauce made with flour substitute, etc....)
Add to white sauce:
1/2 t parsley, chopped
kohlrabi remnants

How To Prepare:

1. Peel and wash kohlrabi. Cut off tops and save for covers. Scoop out the insides. Boil in salted water about 15 minutes; drain. Fill with meat mixture, prepared as follows:
a. Melt fat. Fry onions.
b. Add parsley and mushrooms. Fry a few minutes and add beef.
c. Add egg, salt and pepper.
(the cooked and mashed kohlrabi remnants may be added, too)
2. Cover stuffed kohlrabi with tops. Place in shallow casserole, one next to the other. Prepare white sauce substitute. Add parsley. Rub cooked kohlrabi remnants through strainer and stir in. Add some boiled and chopped kohlrabi leaves. Cook until well blended. Pour over kohlrabi. Simmer 15-30 minutes.
NOTE: Pork may be used instead. The very small kohlrabi leaves may be used as decoration over tops.
