Description: This is sorta like eggplant parmissarm without the breading
Ingredients: 1 small Eggplant sliced into 3/4" pieces( long or round)
2-3 tbls italian dressing
olive oil
1/2 cup white onion chopped
2-3 cloves garlic chopped
1 tomato chopped
1 tsp balsmic vinegar
slices of mozarella cheese
How To Prepare: Marinade eggplant slices in dressing for a few minutes
Throw on a med. hot grill / flip over
this will take 5-7 min. approx each side
In a saute pan add oil (just enough to keep from sticking)
Saute onion, garlic, and tomato for about 5 minutes
add balsamic vinegar , continue another minute.
Season with salt and pepper

When eggplant is tender (leave on grill)top each piece with some saute mixture and mozarella cheese. Cover grill till cheese melts....enjoy

all ingredients are approx., since I threw this together and it came out great. Adjust to your liking
