This is sorta like eggplant parmissarm without the breading
1 small Eggplant sliced into 3/4" pieces( long or round)
2-3 tbls italian dressing
1/2 cup white onion chopped
2-3 cloves garlic chopped
1 tomato chopped
1 tsp balsmic vinegar
slices of mozarella cheese
How To Prepare:
Marinade eggplant slices in dressing for a few minutes
Throw on a med. hot grill / flip over
this will take 5-7 min. approx each side
In a saute pan add oil (just enough to keep from sticking)
Saute onion, garlic, and tomato for about 5 minutes
add balsamic vinegar , continue another minute.
Season with salt and pepper
When eggplant is tender (leave on grill)top each piece with some saute mixture and mozarella cheese. Cover grill till cheese melts....enjoy
