Easy, quick alternative to stuffing the mushroom caps, but with the same great mingling of flavors and textures.
Fresh mushrooms, clean and stemmed
crumbled bacon, if desired (mix with cheeses)
a little cream or chicken broth
How To Prepare:
Mix the cream cheese with the cheddar. Add cream or broth to loosen the mixture as desired. Oil the bottom of your pan, or line with parchment. Place mushrooms flat side down in the pan. Spread the cheese mixture over the mushrooms. Bake at 350 for 20-30 min., and then broil to brown the top.
The cream cheese softens the bite of the cheddar without overwhelming it, and you can add just about anything you like to this. It does taste good the next day, but works better as a side dish than an appetizer.
