A low carb version of a casserole originally made with Spiach and Jiffy cornbread mix.
Dad’s Low Carb Spinach Casserole
2 lbs frozen spinach, thawed and drained
1 can baby corn on the cob
1/8 t liquid splenda (1/2 cup)
4 oz butter, melted
1 cup Carbalose flour
1/3 cup WPI 5000
2 Sweet One packets (4 t)
¼ t stevia powder (1/4 c sweetener)
2/3 cup caseinate
1 T baking powder
½ t salt
½ t xantham
How To Prepare:
Blend dry ingredients. Put baby corn in the food processer. Process until finely ground. Add the rest of the wet ingredianta to the food processer. Process until mixed. Add wet ingrediants to dry ingredients. Mix together This is very thick. Put in a greased casserole dish. I used a 9 inch silicone square pan. It did not need greasing. Bake at 350 degrees for 35-40 minutes, until a knife comes out cleanly.
