A tangy, marinated cucumber salad with purple onions and feta.
2 English Cucumbers
1/4 purple onion
How To Prepare:
Use a vegetable peeler to peel cucumber, creating stripes. Have a section of peeled, then a section of not peeled, and so forth all the way around. Slice cucumber into very thin slices. Put slices into a bowl and salt liberally. Mix with hands to ensure the salt covers all the cucumber slices. Let this sit for an hour or more so that much of the water within the cucumber is drawn out. Drain slices and breifly rinse with water to remove excess salt. Drain again.
Chop purple onion into chunky pieces - as big or small as desired.
Mix cucumber slices, onion, and seasonings together (use as much or little seasonings as you wish). Put salad into a countainer and cover with vinegar. Place lid on and allow to marinate in the fridge for a few hours.
To serve, drain salad well and place on plate with a drizzle of good olive oil over the top. Add some crumbled feta and dig in! Other items such as tomato slices or olives can be added at the end as well; however, these vegetables do not marinate well so add them last.
