Description: This recipe tastes great and looks great and can be prepared, except for the baking, way ahead. Cut it into wedges and serve it as a side vegetable.

All ingredients are mixed in the food processor (or blender) in order to get the xanthan gum smooth.
Ingredients: SPINACH PIE

2 - 6 oz. packages fresh baby spinach
½ cup butter, divided
1 ½ teaspoons xanthan gum
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon garlic powder
4 large eggs, lightly beaten
¾ cup whipping cream
½ cup freshly shredded parmesan cheese

How To Prepare: Sauté spinach in 4 tablespoons butter over medium heat until just wilted. In a separate bowl, melt the other 4 tablespoons butter. Set both aside.

Combine salt, pepper, garlic powder, beaten eggs, melted butter, whipping cream and parmesan in a food processor or blender. Add xanthan gum last and then process for several seconds. Add spinach and pulse 4 or 5 times to mix and chop the spinach slightly.

Pour mixture into a lightly greased 9” pie plate. Bake at 350 for 25 minutes or until set. Let stand 10 minutes. Cut into wedges.
