1 pound frozen cauliflower -- boiled for 4 minutes and drained well
1/4 cup diced onion
1/4 cup diced tomato
1 tablespoon butter
1 tablespoon olive oil
1/2 teaspoon curry powder
1/2 teaspoon minced garlic
1/4 cup water
1 each salt and pepper -- to taste
How To Prepare:
Heat butter and olive oil together. Add garlic, onions and tomato and saute until tomato is soft. Add spices and saute 1 minute. Roughly chop cauliflower into bite sized pieces and add to the pan along with the water. Stir well, cover and heat over high heat for 2-3 minutes or until everything is hot. Removelid and continue heating until most of the liquid is gone. Serve hot.
