2 zucchini -- sliced in half then cut into 1/2" slices (looks like half moons)
1/2 medium onion -- cut into chunks
1 roma tomato -- cut into chunks
salt and pepper -- lots
1/2 teaspoon basil
1 teaspoon chopped garlic
1 piece heavy duty tin foil (18 x 12)
3 tablespoons olive oil -- (3 to 4)
How To Prepare:
Place all vegetable in a big bowl and liberally season with salt and pepper.
Stir and let sit for 5 minutes. Add the rest of the ingredients and stir
well. Spray tinfoil with non-stick spray. Place mixture in the center of
the foil. Double fold all sides down to form a packet. Bake in preheated
450 degree oven for 30 minutes or place on medium or top rack of a preheated
grill on medium high for 20 minutes.
This is so easy, surprisingly delicious, and best of all - no dish to clean!
