Ingredients: 7 zucchini, whole -- sliced and diced into small 1/4 inch squares (7 to 10)
1 container creme fraiche
1 egg
Gruyere cheese...shredded to cover top
2 thin slices onion...just enough for taste. -- (2 to 3)
How To Prepare: Add onion and sliced/diced zucchini to a saute pan with olive oil and cook
until zucc is slightly brown and soft.While cooking stir occasionly. In the
mean time, in a small bowl mix together creme fraiche and egg. Put the
cooked zuccc/onion mixture into an oven proof..1 quart cooking container and
add the creme fraiche/egg mixture to it. Mix it into the vegie...smooth top.
Grate the cheese on top and cook in a 375 oven for approx 35-45 min. Cool
slightly before serving. This amount can be doubled....You could subsitute
sour creme for the creme fraiche and swiss cheese for the Gruyere. This
recipe serves 6-8.
