1 head cauliflower, head -- flowerets, chopped, cooked, very soft, florets only
1 tablespoon butter
salt and pepper -- to taste
3 ounces cream cheese
How To Prepare:
Mash, whip with a mixer, or blend in food processor.
Jamie adds·"I've sometimes used a bag of frozen cauliflower, but I think a head of fresh cauliflower gives much better texture. I simmer
the cauliflower with a chopped clove of garlic to cover the mild "cabbagey" taste."
Post from unknown person: You cook up cauliflower (boil or steam), drain well & pat dry with clean
kitchen towel. Mash. Add butter, heavy cream, S&P to taste.
