1 pound green beans -- FRESH, tipped and washed
8 cloves garlic -- whole, peeled
1/4 cup olive oil
salt and pepper -- to taste
4 large tomatoes -- fresh, chopped, the riper the better>
1 large onion -- chopped
How To Prepare:
Heat the olive oil in a large stock pot. Add whole garlic and cook until light brown. Add onion and cook until slightly golden. Add green beans and cook, stirring frequently for 10 minutes. Stir in chopped tomatoes and 1/4 cup of water. Cover the pot
and cook on medium for about 45 minutes to an hour, stirring every 5-10 minutes, until green beans are very tender. be sure the stew does not dry out. If you see it is getting dry and not "saucy", just add about 1/4-1/2 cup of water to it. This is trad
itionally served cold with pita bread...but it tastes great as a hot stew.
