1 pound fresh spinach -- washed, cut into 2 inch pieces
2 tablespoons oil
salt to taste
1 small can bamboo shoots
8 fresh mushrooms -- sliced
1/4 cup chicken broth
How To Prepare:
wash spinach: cut into pieces. Heat oil in wok or skillet. Add salt and spinach and stir fry for two minutes. Add bamboo shoots, mushrooms and broth; mix. Simmer about 2-4 minutes until heated through. Yield 2-4 servings
