This is the best Tzatziki dip ever - I use it for grilled pork or chicken - even veggies would be great to dip in this!
1 large container of yogurt
3 cloves garlic
pinch of dried dill
How To Prepare:
Yogurt should be drained to make yogurt cheese. You drain it by taking a colander and placing a coffee filter (or two) in the centre. Dump in the yogurt and let the whey (clear liquid) drain off. This will take anywhere from 2 to 8 hours. I actually use a small colander that fits inside a bowl and then leave the whole thing in the fridge overnight. The better quality yogurt, the less liquid you will have when you're finished.
Cucumber needs to be grated and really WELL drained. A sprinkle of salt on the cucumber will draw out any extra liquid. I grate it onto paper towel and then squeeze out the liquid.
Press the garlic with a garlic press and add to drained yogurt and cucumber. Stir in the dill. Allow flavours to blend for at least an hour in the fridge.
