Ingredients:
|
1 (8oz) can of sliced bamboo shoots,( you must tenderize these before using. You can either boil them or steam them, but they need to be soft and tender.)
1 cup crushed pork rinds
salt and pepper to taste
1 8(oz)block sharp cheddar cheese, shredded
1 8(oz.) block extra-sharp cheddar cheese, shredded
6 large eggs, lightly beaten
4 cups cream

How To Prepare:

1 Tenderize the slicedbamboo shoots until they are soft and tender, then drain.
2.In large bowl, lightly beat eggs, add cream and mix well.
3. Add drained bamboo shoots and crushed pork rinds, mix well.
4. Add cheeses and mix.
5. Grease large 9x13 pyrex.
Pour mixture in and bake at 350 degrees for 1 hour.
6. Let stand 15 mins.
*This recipe makes 8 generous servings so you may want to make just half of it. I make it all and freeze the left over portions in individual servings for later.
