I combined two low-carb recipes that I had found and came up w/this quiche for dinner. DH and DD LOVED it! I liked it, as well. I'm sorry, but I have NO idea what the carbs would be. I didn't have the time to do that part. It made four GENEROUS servings.

Ingredients:
|
1 (10 oz) pkg frozen, chopped Spinach – microwaved w/liquid squeezed out
2 Tbs. olive oil and 2 Tbs. unsalted butter
1 medium (or half large) onion, chopped
2 cloves minced garlic
¾ to 1 cup heavy cream
6 eggs
½ to ¾ cup grated Parmesan/Romano cheese
1 cup shredded mild cheddar
½ cup shredded Monterey Jack or shredded cheese for pizza
Salt and pepper to taste
Dash nutmeg

How To Prepare:

Preheat oven to 350° Heat butter and oil in medium pan. Sautee onion and garlic until onions start to brown. Add drained spinach. Heat everything together for 10 minutes.
In bowl, whisk the heavy cream, eggs and cheeses. Season w/salt and pepper and add nutmeg. Stir in the spinach mixture. If it looks very thick, add a bit more cream. Pour into greased 8-inch square glass pan. Bake in preheated 350° oven for 40 minutes until the top is slightly brown. Pull out of oven and let sit for 15 minutes before serving.
