Terrific when you miss a cheesy rice dish. This one is perfect to compliment any low carb meal.
4 cups grated cauliflower
1/4 cup of diced onion
1/4 cup of diced bell peppper
1 can/jar of salsa
4 oz of Velvetta
(salt, pepper and garlic to taste)
How To Prepare:
Grate cooked cauliflower with food processor.
While in processor add your seasonings. In frying pan add a little olive oil and saute onion and bell peppers until tender. Mix the two together with the salsa and add your velvetta cheese in the frying pan. Cook until melted.
(For an even quicker way of making this don't use onion or green pepper they have salsa in the jar with those ingredients and you can do the rest in the microwave)
