If you need a quick pizza fix, here ya go!
|
|
Ingredients:
|
1 small low-carb tortilla
1 tsp trace-carb fave pesto
1 TBSP spicy salsa or chile
Grated Parm
** 3 slices of zero-carb deli ham
Toppings:
Mozzarella cheese (I only use fresh- tastes best!)
Fresh sliced mushrooms (about 3)
Sliced zero-carb salami
Sliced zero-carb pepperoni
Fresh Basil
Fresh garlic
or your own faves!

How To Prepare:

Preheat toaster-oven to 350'
Line the toaster oven pan w/ a piece of foil and a teeny bit of olive oil.
make a "circle" the same size as the circumference of the tortilla w/ the ham slices
layer up the toppings and Mozzarella
Bake until cheese is crispy. You will have a little run-off. It's OK!!
Remove pan from the toaster oven and set aside to slightly "cool".
While this is happening, using tongs over a lit gas burner, "brown" the tortilla on both sides until crisp. Put on a plate.
On the tortilla in a circular motion, layer the pesto, salsa, then some grated parm.
Using a large spatula, remove the pizza toppings from the pan and place on top of the tortilla. Top w/ a little more parm if you like, oregano, etc.
Cut into 4 slices. ENJOY!
