A great "casserole" style dish that is great for either breakfast, brunch, lunch or dinner. Sort of quiche-like without the milk/cream, or crust.
14 oz.coarsely grated unpeeled zucchini (approx. 1 med.or 2 small)
6 slices raw bacon (diced)
1 large onion (diced)
5 eggs (lightly beaten)
1 cup of Carbquick OR (I prefer using the LC cake/cookie flour mixture submitted by Kevinpa INSTEAD of the CQ....his recipe can be found in the Recipe help & sugg. forum)
1/3 cup oil
1 cup grated Cheddar cheese
salt & pepper to taste
How To Prepare:
In large bowl mix all the ingredients together with a spoon. Add salt & pepper to taste. Pour into a greased 9x13 pan (can use a slightly smaller one if you prefer).
Bake @ 350 degrees for 45 minutes to 1 hour.

If you can afford the extra carbs...it's nice to add a few grated snack size baby carrots for color. Whole kernel corn is nice also if you can afford the carbs.
