So i invented this one out of desperation and laziness. Hope you enjoy!
2 cups cauliflower 5.2
1 pd ground sirloin
2 scallions 1.0
3 mushrooms 1.0
1/2 cup zucchini 1.1
2 tablespoon ricotta 2
1/2 heavy cream 2
1/2 cup low carb tomato sauce 4
How To Prepare:
total carbs 16.3 total servings 4 thus only 4 carbs per serving.
brown the sirloin and add all the veggies along with the tomato sauce and 1/2 cup water. once everything is cooked, add cream and ricotta. cook for a few more minutes until everything is combined. spice however you like. add mexican or italian. I elected to go with italian. might do mexican next time. This turned out to be very filing and pretty low in carbs for a meal. to adjust the carbs, add more meat and fewer veggies. all carb counts taken off the atkins website.
