2 16 oz bags frozen chop leaf spinach
1 quart egg beaters
¾ cup grated parmesan cheese
12 x 18 pan, 1 inch deep is good
How To Prepare:
Thaw and drain spinach well. In large bowl, mix spinach, egg and ½ cup parm cheese. Spray pan with non stick and pour mix into pan. Distribute evenly and flatten with spatula. Sprinkle remaining parm over top. Bake for 35 minutes at 375. It may bubble up but will flatten when you take out. Makes 12 slices. I toast them as I use them….optional suggestion! Also can cut recipe in half and use smaller pan. Great for sanwiches!
